In this reportage series, we follow the San Marzano tomatoes from the field just southeast of Mount Vesuvius, through the hands of the experienced pickers, to being weighed at the co-operative, and through to quality control. They are washed, sorted, steamed, sorted, and then re-sorted before the very best ones are put into tins.
